Quinces bring summer into winter. Their bright yellow color, their intense fragrance and their magical color change when cooked are truly amazing. "The peel of quinces is hairy, their smell is amazing, and they change color when cooked. They must be magical!" - this is how I got introduced to quinces, 10 years ago, in Tasmania, Australia. I had never heard of them before, let alone tasted them. I can't explain how that can be possible, but once I had my first taste, this fruit became my favorite. I always keep a few jars of homemade quince jam in the house, to add some magic to my dishes.
